Sweet Potato Paste (Salad)

This is a salad served in restaurants in Butte, Montana. It's easy and tasty even if the name sounds strange.

Ingredients

• 1 1⁄2 lbs sweet potatoes, boiled or 1 1⁄2 lbs canned sweet potatoes
• 3 -4  stalks celery, diced
• 4  hard-boiled eggs, chopped
• 3 -4  scallions, chopped fine
• 1⁄4 teaspoon salt, to taste
• 2  tablespoons  Durkee's sauce, Sandwich and Salad
• 1⁄3 cup mayonnaise

Directions

1. Mash sweet potatoes.
2. Add other ingredients.
3. Season to taste with salt.
4. Chill.
