Sweet Potato Pancakes

Ingredients
- 1 1⁄4 cups whole wheat flour
- 1⁄4 cup ground flax seeds
- 2 1⁄4 teaspoons baking powder
- 2 teaspoons pumpkin pie spice
- 1⁄4 teaspoon salt
- 1 1⁄2 cups 2% low-fat milk
- 2 tablespoons brown sugar
- 1 tablespoon canola oil
- 2 teaspoons vanilla
- 2 eggs, lightly beaten
- 3⁄4 cup sweet potato, steamed and mashed
Directions
- Combine dry ingredients.
- In blender, puree remaining (wet) ingredients.
- Mix wet and dry ingredients.
- Cook according to pancake skillet directions.
