Sweet Potato Hash

Yields: 3-4 cup
Ingredients
- 2 large sweet potatoes, peeled and shredded
- 1 onion, chopped
- 1 -2 red bell pepper, chopped
- 3 slices bacon, diced
- 2 tablespoons white wine or 2 tablespoons chicken broth
- 1 teaspoon salt
- 1 -2 teaspoon Tony Chachere's Seasoning (or to taste)
Directions
- In a large skillet, fry bacon pieces over med-high heat until browned.
- Add onion and peppers to skillet and saute until onions are golden to slightly browned.
- Add white wine or broth to pan to deglaze. Add sweet potatoes. Stir to combine. Cover and cook over medium heat until sweet potatoes are softened.
- Season with salt and Cajun seasoning.
- Serve warm.
