Sweet Potato Chips

Ingredients
- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1 dash salt
- 1 dash pepper
Directions
- Preheat oven or grill to 400 degrees.
- Using a very sharp knife or a mandolin, slice the sweet potatoes into very thin rounds.
- Drizzle slices with olive oil and sprinkle with salt and pepper. Toss to coat.
- Lay slices in a single layer on a baking sheet and place in the oven, or lay on a sheet of foil on top of the grill.
- Cook about 20 minutes, turning halfway through cooking, until crispy.
