Sweet Potato Casserole

This is the recipe my mother-in-law uses and it is so sweet, I would rather have this than dessert. I didn't include in the prep time, the baking and mashing of the potatoes.

• Serves: 8-10

Ingredients

• Casserole

• 3  cups mashed sweet potatoes
• 1⁄2 cup butter
• 2  eggs
• 1  cup white sugar
• 1  tablespoon vanilla
• 2  tablespoons flour

• Topping

• 1  cup brown sugar
• 1⁄3 cup flour
• 1⁄4 cup butter
• 1  cup pecans

Directions

1. Preheat oven 375 degrees.
2. Combine the casserole ingredients and pour into a 9x9 baking dish.
3. Combine the ingredients for the topping to make a crumble and sprinkle over the casserole.
4. Bake for 30 minutes until casserole is set.
