Sweet Potato Casserole

Ingredients
- 2 cups sweet potatoes
- 2⁄3 cup evaporated milk (Pet brand preferred)
- 1 cup sugar
- 1 (16 ounce) can coconut
- 1 teaspoon vanilla
Topping
- 1 (16 ounce) can crushed pineapple
- 1 cup sugar
- 1 (8 ounce) bottle cherries
- 2 tablespoons cornstarch
Directions
- Beat sweet potatoes with mixer; add remaining ingredients and mix well. Pour in backing dish and bake at 350 degrees for 30 minutes.
- Toppings: Cook together until thick. Put on top of cooked sweet potatoes and cook 10 minutes more in oven.
