Sweet Potato Burritos

Ingredients
- 1 tablespoon vegetable oil
- 6 -8 tortillas
- 400 g red kidney beans
- 1 onion
- 2 teaspoons minced garlic
- 1 1⁄2 cups water
- 2 cups sweet potatoes
- 125 g grated cheddar cheese
Directions
- Pre-heat oven to 175°C.
- Heat oil in a medium frypan and saute the onion and garlic until soft. Stir in red kidney beans and mash lightly. Add in seasoning mix from kit and stir in water.
- In the meantime cook and mash sweet potatoes.
- Divide the bean mixture and mashed sweet potato evenly between warmed tortillas from kit, placing the mixture in the middle.Top with cheese. Fold up tortillas around the mixture burrito style and place on a baking tray.
- Bake for 12 minutes.
- Serve with salsa.
