Sweet Potato and Sausage Casserole

Ingredients
- 8 ounces rotini pasta
- 8 ounces mild Italian sausage (diced or crumbled)
- 2 medium sweet potatoes, cut into 1/2-inch cubes
- 3⁄4 cup green bell pepper, chopped
- 1⁄2 cup onion, chopped
- 1 teaspoon garlic, minced
- 2 tablespoons olive oil
- 1 (14 1/2ounce) can diced tomatoes, undrained
- 1 cup half-and-half
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 cup cheddar cheese, shredded
Directions
- Cook pasta according to package directions.
- Preheat oven to 350 degrees F & grease a 13"x9" baking dish.
- In a large skillet, cook sausage, sweet potatoes, green pepper, onion & garlic in oil over medium heat for 5 minutes or until vegetables are tender, then drain.
- To these vegetables, add the tomatoes, half-and-half, salt & pepper, then bring to a boil & remove from the heat, before transferring to the prepared baking dish.
- Sprinkle with cheese & bake, uncovered, for 25-30 minutes or until bubbly.
- Let stand for 5 minutes before serving.
