Sweet Pork

Yet another Cafe Rio pork knockoff. This is quite sweet, but we love it. We just use a little bit in a wrap with cilantro rice (http://www.food.com/recipe/yummy-cilantro-rice-461252), cheese, tomatoes, lettuce, beans, and cilantro sauce (http://www.food.com/recipe/cilantro-vinaigrette-dressing-461859). I use uncooked tortillas because I think they are sooooo much better than precooked. I often double the recipe to increase my number of premade meal portions. Show more

Directions

  1. Fill crockpot with roast and water to fill 1/2 way.
  2. Cook on high for 5 hours.
  3. Discard liquid. Cut roast in 4 sections and trim visible fat.
  4. Puree salsa in blender, then add brown sugar and coke.
  5. Return all to crockpot and cook on high for 3 more hours.
  6. Shred with a fork.
  7. I put 10oz. portions in freezer bags (what my family will use for a meal and have enough for a couple of wraps left over).
