  1. Remove the skin and fat from the pork (the dish will taste better), cut the pork into cubes.
  2. Boil water in a pot and add one tablespoonful of nuoc-mam. Add the pork. Cook for 30 to 45 minutes. Drain the pork.
  3. Thinly slice the onions and brown in a pan with the pork, nuoc-mam, soy sauce and whiskey.
  4. Make caramel (cover 8 tablespoons or more of sugar with water and bring to the boil. As soon as the sugar begins to brown add a little water).
  5. Pour the caramel over the pork and stir.
  6. Sprinkle chopped chives and chili peppers over the dish and serve hot.
