Sweet Pickle Spears

Yields: 10 half pints
Ingredients
- 4 lbs cucumbers (3-4inch)
- 4 cups sugar
- 3 3⁄4 cups vinegar
- 3 tablespoons canning salt
- 4 teaspoons celery seeds
- 4 teaspoons turmeric
- 1 1⁄2 teaspoons mustard seeds
Directions
- slice ends from cucumbers and cut into spears.
- Cover cucumbers with boiling water; let stand 2 hours.
- Drain and pack into hot jars, leaving 1/4 inch head space.
- Bring remaining ingredients to a boil.
- Pour hot liquid over cucumbers, leaving 1/4 inch head space.
- Remove air bubbles.
- Adjust caps.
- Process l0 minutes in boiling water bath.
