Sweet Onion (Vidalia) Soup

This easy soup can be made with any type of large sweet onion if Vidalias aren't available. We like it plain but you could top it with a toasted baugette slice topped with melted cheese if you prefer. Show more

  1. Thinly slice onions. In a soup pot heat the olive oil on medium. Add the onions and sauté for ½ hour.
  2. Add the paprika, broth, wine and the bay leaf.
  3. Simmer for 30 – 40 minutes, remove the bay leaf and add salt and pepper to taste.
