Sweet Mustard Sauce

Ingredients

  • 14 cup cider vinegar
  • 1  red onion, sliced
  • 1  tablespoon  oil
  • 1  lb  pork loin
  • 1  cup  soup, base
  • 14 cup Dijon mustard
  • 14 cup  . pureed  canned apricots

Directions

  1. 1 in a sauce pan heat vinegar , sugar and salt to make a brine. pour over onions. do this ahead.
  2. 2Heat the oil in a large skillet over medium-high heat. Season the pork with 1/2 tsp salt and 1/4 tsp pepper and cook, until browned and just cooked through, 3 to 4 minutes per side; transfer to plates.
  3. 3 While pork cooks, mix soup base, mustard, jam and chopped onion until blended. heat to a simmer and season to taste spoon on the pork; top with the pickled onions.
