Sweet Curry Vinaigrette

Ingredients
- 1 cup extra virgin olive oil
- 1⁄2 cup white wine vinegar
- 2 cloves garlic
- 10 -12 fresh mint leaves
- 2 tablespoons curry powder
- 1 lemon, juice of
- 1 teaspoon salt
- 1 teaspoon pepper
- 1⁄4 cup maple syrup
Directions
- This couldn't be simpler. Put the ingredients in a blender and blend on high for a good minute or so; the longer you blender, the lighter it becomes. Use right away, or store airtight in the fridge for a week.
