Sweet Coconut Lentil Stew

Ingredients
- 3⁄4 cup lentils
- 2 cups broth
- 4 tablespoons canola oil or 4 tablespoons corn oil
- 1 tablespoon cumin
- 1⁄3 cup shredded sweetened coconut
- 2 small potatoes
- bacon bits (optional)
- shallot (optional)
Directions
- Peel and cube potatoes, boil for a few minutes.
- In a saucepan, combine lentils and broth, heat to boiling. Cover and reduce to medium-low heat, simmer until tender (about 15 minutes).
- Meanwhile, in a skillet heat oil and fry potatoes on high heat. Add cumin, shallots and coconut. Add a little bit of extra coconut. Cook 3 minutes. Add salt to taste.
- Mix it all together and top with bacon bits.
