Sweet Chilli Broccollini and Prawns

Ingredients
- 1⁄4 cup peanut oil
- 2 teaspoons fish sauce (or soy sauce)
- 1⁄4 cup fresh lime juice
- 2 tablespoons brown sugar
- 3 small red chilies, deseeded and finely chopped
- 800 g prawns, deveined and peeled leaving tails
- 5 green onions, sliced
- 400 g Broccolini, halved
- steamed rice, to serve
Directions
- Combine oil, fish sauce, lime juice, brown sugar and chillis in medium jug. Whisk well to combine.
- Place prawns in bowl, pour over marinade. Cover with plastic wrap and refrigerate 15 minutes. Drain prawns reserving marinade.
- Heat wok on high.
- Add 1 tbs prawn marinade and heat until hot. Add 1/2 the prawns and stir fry 1-2 minutes. Remove to plate.
- Repeat using another 1 tbs prawn marinade and remaining prawns.
- Return all prawns to wok. Add green onions, broccolini and prawn marinade.
- Stir-fry 2-3 minutes.
- Serve with rice.
