Sweet beef curry with corn and peas

Ingredients
- 1 tablespoon olive oil
- 1 -2 tablespoon curry paste
- 500 g beef, diced
- 1 cup water
- 2 cups coconut milk
- 2 chicken bouillon cubes
- 1 cup baby corn, spears
- 1⁄2 cup fresh green peas
- 1⁄2 teaspoon fish sauce
- 2 teaspoons soft brown sugar
- 2 teaspoons lime zest, finely grated
- 1⁄2 cup basil, shredded
Directions
- Heat oil in a wok.
- Add the curry paste.
- Stir-fry for a minute.
- Add beef.
- Stir-fry, tossing the mixture continuously until lightly brown.
- Add coconut milk, water and chicken stock cubes.
- Bring to a boil.
- Simmer uncovered for 15 minutes.
- Add baby corn and peas.
- Cook for 5 minutes.
- Add fish sauce, brown sugar, lime rinds and basil.
- Mix well.
- Garnish with basil.
- Serve hot.
