Sweet Baked Beans

Serves: 4-6
Ingredients
- 1 lb dried navy beans
- 1⁄4 lb salt pork, diced
- 1 tablespoon dry mustard
- 1 1⁄2 onions, finely chopped
- 2⁄3 cup ketchup
- 2 garlic cloves, minced
- 1⁄4 cup molasses
- 5 cups hot water
- salt, to taste
- black pepper, to taste
Directions
- place beans in large bowl and cover completely with cold water, soak for 12 hours.
- drain beans and transfer to large saucepan. cover completely with fresh water and bring to a boil. season with salt and pepper, cook for 30 minutes over medium heat.
- preheat oven to 300*F.
- drain beans and transfer to bean pot. add remaining ingredients, including hot water, season generously. cover and cook for 3 hours in oven.
- thirty minutes before end of cooking, remove cover.
