Directions

  1. Crispy Baked Wings:
  2. Adjust your oven racks to the lower middle section and the upper middle section. Preheat the oven to 250°. With a paper towel, pat the chicken wings dry. Line a large baking sheet with foil and coat with non stick cooking spray. Place the chicken wings, baking powder and salt in a large ziplock bag, shaking to coat evenly. Be sure that they are coated evenly as you don't want clumps of baking powder on just a few of the wings otherwise they will not crisp up. Place the chicken wings on the prepared baking sheet, fat side up. Place the baking sheet on the lower middle rack and bake for 30-35 minutes. Meanwhile prepare sweet and spicy bbq sauce (recipe below). Increase the heat to 425° and move the wings to the upper middle rack, baking for an additional 45-50 minutes. Brush the wings with the sweet and spicy bbq sauce and return to the oven for 5 minutes. Serve immediately with extra bbq sauce if desired.
  3. Sweet and Spicy BBQ Sauce:
  4. Combine all the above ingredients in a saucepan and bring to a slow boil over medium heat. Reduce to a simmer and allow the sauce to cook for 5-7 minutes. Allow the sauce to cool and then transfer to a clean jar and refrigerate.
