Sweet and Sausage Stir Fry

Ingredients
- 1 lb reduced-fat kielbasa, cut into 1/2 slices
- 1⁄2 cup chopped onion
- 1 cup carrot, shredded
- 1 (8 ounce) can unsweetened pineapple chunks
- 1 tablespoon cornstarch
- 3⁄4 teaspoon ground ginger
- 6 tablespoons water
- 2 tablespoons reduced sodium soy sauce
- 2 cups hot cooked rice
Directions
- In a large nonstick skillet, stir fry sausage 3-4 minutes or until lightly browned.
- Add onions, and carrots, stir fry until crisp tender.
- Drain pineapple, reserving juice.Add pineapple to sausage/vegetable mixture.
- In a small bowl, combine cornstarch and ginger. Stir in water, soy sauce, and reserved pineapple juice until smooth.
- Add soy sauce to skillet.
- Bring to a boil, Cook, stirring continually for 1-2 minutes, or until sauce is thickened.
- Serve over cooked rice.
