Swedish Pickled Beets

Adapted from House & Garden, 1964! Easy and tasty! A Scandinavian table is seldom without them. You can use canned beets for this.

Ingredients

• 1⁄2 cup cider vinegar (or white vinegar)
• 1⁄2 cup water
• 1⁄4 cup sugar
• 1  teaspoon salt
• 1⁄8 teaspoon fresh ground pepper
• 2  cups beets, thinly sliced, cooked and peeled

Directions

1. Combine vinegar, water, sugar, salt and pepper.
2. Bring to a boil; cool. Place beets in a deep bowl and pour dressing over them.
3. Let stand at least 12 hours before serving.
4. Serve with fried fish, hot and cold meats or on a smörgasbord. Enjoy!
