Swedish Pancakes

Swedish Pancakes (similar to crepes)

Yields: 12 pancakes

Ingredients

  • 1  cup  sifted  pastry flour
  • 2  tablespoons sugar
  • 13 teaspoon salt
  • 3  eggs
  • 1  cup milk (almond milk works fine)
  • 2  tablespoons  salad oil

Directions

  1. sift dry ingredients.
  2. gradually add unbeaten eggs, milk and salad oil.
  3. beat until batter is perfectly smooth.
  4. strain.
  5. pour batter, a tablespoon at a time, on a hot griddle tilting griddle as batter is poured so as to make a very thin cake.
  6. a perfectly round crepe may be made if a small 5" fruing pan is used.
  7. fill cooked cakes with strawberry preserves and roll.
  8. serve with melted butter and powdered sugar, syrups, fruit.
