Swedish Meatballs

My Aunt Eva's recipe. A very traditional preparation. Just delicious!

Serves: 4

Ingredients

  • 1  lb  round steak
  • 12 lb  veal steak
  • 14 lb  fresh fat pork
  • 2  cups milk
  • 12 cup  dry breadcrumbs
  • 12 teaspoon black pepper
  • 2  medium eggs
  • 1  medium onion, minced
  • 3  tablespoons butter
  • 18 teaspoon allspice, ground
  • 1  cup  stock

Directions

  1. Beat eggs, add milk and crumbs and let soak.
  2. Grind all meats very fine.
  3. Brown onion in 1 teaspoons butter.
  4. Add all ingredients (onions last) to meats and stir until very smooth.
  5. Form into 1" balls and fry in butter until brown.
  6. In same pan, pour over the meatballs 1 cup hot stock of your choice and simmer around 20 minutes.
