Surprise Meringue Kisses

The surprise is the milk chocolate center. a cookie made by covering the candy kiss in a stiff meringue flavored with vanilla and peppermint extract if desired. Comes from my Better Homes and Gardens recipe card collection. I have not made these yet, prep time is a guess. Show more

Yields: 44 cookies

Ingredients

  • 3  egg whites
  • 1  teaspoon vanilla
  • 14 teaspoon cream of tartar
  • 14 teaspoon  peppermint extract (optional)
  • 1  dash salt
  • 1  cup granulated sugar
  • 44  milk chocolate kisses
  •  green sugar crystals

Directions

  1. In a small mixing bowl beat egg whites with vanilla, cream of tartar and peppermint extract if using.
  2. Add salt till soft peaks form (tips curl over).
  3. Gradually add the sugar, 1 tablespoon at a time.
  4. Beat until very stiff peaks form (tips stand straight up).
  5. Drop from a Tablespoon onto lightly greased cookie sheet. Leaving 11/2 inches apart.
  6. Press a kiss into each cookie.
  7. With a knife or narrow spatula bring meringue up and over the kiss.
  8. swirl top.
  9. sprinkle with green sugar.
  10. Bake at 275 for 30 minutes or until set.
  11. Immediately remove cookies to rack.
  12. cool.
  13. Enjoy.
  14. You can vary this by trying other flavored kisses as well.
