Sure-Bet Macaroons

I recently went to an estate sale and picked up several old and worn handwritten cookbooks. While a lot of the recipes are classics I will post some of the more unusual ones here. Some of the ingredient amounts are not specific, but I will do my best to make educated guesses where needed. For this recipe I'm guessing at the amount of cookies to be about 4 dozen, as well as the size of the cake mix. Show more

Serves: 48

Yields: 48 cookies

Ingredients

  • 1  pint  Orange sherbet
  • 1 (18 ounce) package  white cake mix
  • 1 -2  tablespoon  almond extract
  • 2 (7 ounce) packages coconut (6 cups)

Directions

  1. Soften sherbet in large bowl. Add cake mix and almond extract. Blend just until well mixed.
  2. Stir in coconut.
  3. drop by teaspoonsful on greased cookie sheet.
  4. Bake at 350 for 10-13 minutes.
