Ingredients
- 1 cup Baby Spinach
- 1 cup chopped romaine lettuce
- 1⁄4 cup shredded red cabbage
- 1⁄2 cup sliced red pepper
- 1⁄2 tomatoes, chopped
- 1⁄4 cup chickpeas
- 1⁄2 cup grated carrot
- 1⁄4 avocado, cubed
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
Directions
- Toss all ingredients together but oil and vinegar.
- Mix oil and vinegar and toss with salad.
