Super Simple Pineapple Cake

Ingredients
For the Cake
- 2 cups flour
- 1 1⁄2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 eggs
- 1 (20 ounce) can crushed pineapple
- 1⁄2 cup coconut flakes
- 1⁄2 cup brown sugar
For the Syrup
- 1⁄4 slice margarine
- 1⁄4 cup sugar
- 1⁄8 cup milk
- 1⁄2 teaspoon vanilla extract
Directions
- Mix the dry ingredients for the cake.
- Stir in the Eggs and Pineapple.
- Pour the mixture into a 9x13 pan.
- Sprinkle the Coconut and Brown Sugar over the top.
- Bake at 350 degrees for 40 min--or until cake is slightly browned on top and passes the "toothpick test".
- Once the cake is out of the oven, mix all of the syrup ingredients in a saucepan and bring to a boil.
- Pour hot mixture over the warm cake.
- Make sure you let the cake sit for a few minutes to let the syrup get completely absorbed before serving.
