Super Sautéed Summer Squash

Ingredients
- 2 tablespoons olive oil
- 1 large vidalia onion, chopped
- 6 yellow squash, sliced into 1/2 inch slices
- 1 large tomatoes, chopped
- 2 garlic cloves, finely chopped
- 1 teaspoon red pepper flakes
- 1 tablespoon chopped fresh basil
- salt
Directions
- In a large skillet heat the olive oil over med heat. Add the onion, squash, garlic and tomato and sauté for 10 minutes, or until tender.
- Add the red pepper flakes, basil and salt and remove from heat.
- Serve with parmesan if desired.
