Super Salad

This salad is low GI and protein rich. Make a big one and keep adding goodies to eat as a main dish! This recipe is for the side dish version that my family enjoys. Show more

Serves: 6

Ingredients

  • 6  cups lettuce, torn into bite sized pieces
  • 12 red bell pepper, chopped
  • 1  medium cucumber, sliced
  • 13 cup walnuts, chopped
  • 14 cup  pumpkin seeds
  • 1  medium apple, chopped
  • 12 cup chickpeas, canned is fine, rinsed and drained

Directions

  1. Combine all ingredients in a large salad bowl.
  2. Toss and serve.
