Super Pancakes

Ingredients
wet
- 1⁄2 cup flax seed
- 3 cups vanilla-flavored soymilk
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 2 tablespoons melted margarine (butter- flavored)
dry
- 4 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg
- 1⁄2 cup flax seed meal
- 1⁄4 cup soy flour
- 1 3⁄4 cups whole wheat pastry flour
- non-fat cooking spray (for griddle)
Directions
- grind flaxseed in food processor, coffee grinder, blender, etc. until fine & almost pasty.
- combine wet ingredients in microwaveable container.
- microwave on high for 1 minute.
- combine dry ingredients in bowl.
- combine wet ingredients & melted margarine.
- blend wet ingredients & dry ingredients.
- fry on griddle.
