Super Easy Egg-Free, Dairy-Free, Yummy Healthy Waffles

I finally created a delicious allergy-friendly Belgian waffle style recipe for my 8 year old! Plus, to pack in as many nutrients as possible I've added coconut milk, chia seeds and steel cut oatmeal for a wonderfully buttery, crunchy and healthy waffle - that no one can tell is allergy friendly! I often double the recipe and freeze extras that we can later heat up in the toaster. Hope you enjoy! Show more

Yields: 4 waffles

Ingredients

  • 1  teaspoon brown sugar
  • 1  tablespoon  chia seeds
  • 4  teaspoons baking powder
  • 1  tablespoon  powdered egg substitute (no need to mix with water in advance)
  • 13 teaspoon salt
  • 3  tablespoons steel cut oats
  • 1 13 cups flour
  • 12 cup  dairy-free  butter substitute, melted
  • 1 34 cups coconut milk (from carton or can, rice or soy milk works also)

Directions

  1. Add all ingredients into a blender and blend until well mixed.
  2. Ladle mixture into hot waffle iron and bake.
