Sunshine Spice Cake

A golden cake based on Jessica Seinfield's recipe from Deceptively Delicious.

Ingredients

• 1 (18 ounce) box  yellow cake mix
• 1  cup carrot, pureed
• 1⁄4 cup water
• 2  eggs
• 1  teaspoon mixed spice

Directions

1. Preheat oven to 180 degrees Celcius. Coat a 9 inch square cake pan with cooking spray.
2. In a large mixing bowl combine all ingredients. Beat until smooth.
3. Pour the batter into the cake pan and bake until a toothpick inserted comes out clean - about 25 minutes.
