Sunshine Salad

This recipe was on the back of a Jell-O box when I was a kid. Haven't seen it in many years, but am still making it from memory. Really easy, tasty, and pretty. Cooking time includes time to gel. (Do not try to use fresh pineapple in this recipe - the enzymes in the pineapple will interfere with gelling) Show more

  1. Prepare gelatin according to package directions, substituting the pineapple juice for the equivalent amount of cold water. Cool, and place in refrigerator.
  2. When gelatin has thickened (about 1-1 1/2 hours), still in carrots and pineapple, distributing them evenly. Return to refrigerator to completely set. To serve, unmold or serve from bowl.
