Sunday Morning Chocolate Chip Pancakes

Ingredients
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 4 teaspoons sugar
- 1 teaspoon salt
- 1 1⁄2 teaspoons baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon cinnamon
- 3 eggs
- 2 cups buttermilk
- 2 tablespoons canola oil
- 1 cup chocolate chips
- vegie cooking spray
Directions
- I place my wire mesh colander over a mixing bowl and place all the dry ingredients in that so it will sift as I measure into it.
- Or you can sift all dry ingredients into one bowl.
- In another mixing bowl, slightly beat three eggs and mix with the buttermilk and oil.
- Then fold in the dry ingredients and stir just until all is incorporated.
- *Do not over stir or your pancakes will be tough.
- Let the batter rest for 10 minutes, or more.
- Heat a griddle or skillet over medium heat and lightly grease with either spray or butter.
- Spoon the batter onto the hot griddle and sprinkle with chocolate chips.
- Turn when little bubbles appear.
- Cook for another 3-5 minutes.
- Serve warm.
