Sun Dried Tomato Dip

Ingredients
- 1⁄2 a capsicum, diced
- 100 g chopped sun-dried tomatoes
- 1⁄4 cup balsamic vinegar
- 1⁄4 cup white vinegar
- 1⁄4 cup sugar
- 1 garlic clove, very finely diced
- 250 g cream cheese
Directions
- Simmer all the above ingredients, except for the cream cheese, for about 45 minutes until softened and thickened.
- Cool.
- To serve: Turn cheese onto platter and pour over the cream cheese ~ serve with crust bread, crackers or savour biscuits.
