Sun-Dried Tomato and Goat Cheese Dressing

Yields: 1/2 cup
Ingredients
- 3 sun-dried tomatoes (not in oil)
- hot water
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 2 tablespoons lemon juice
- 1 tablespoon goat cheese
- 2 garlic cloves, minced
- 1⁄2 teaspoon dried marjoram
- 1⁄8 teaspoon dried thyme
- salt and pepper
Directions
- Place tomatoes in a small bowl. Cover with hot water. Let stand until softened, about 15 minutes. Drain and finely chop.
- Mix tomatoes and remaining ingredients. Refrigerate until serving time.
- Mix again before serving.
