Summer Zukes & Squash Dish

Ingredients
- 2 cups zucchini, sliced and quartered
- 2 cups yellow squash, sliced and quartered
- 1 cup cherry tomatoes, whole (or halved)
- 1⁄2-1 cup chow mein noodles
- 2 -4 tablespoons parmesan cheese, grated (to taste)
- 1 tablespoon soy sauce (teriyaki or schezuan, to taste)
- 1 -2 teaspoon bbq seasoning (to taste)
- 1 -2 teaspoon garlic powder (to taste)
- 1 -2 teaspoon onion powder (to taste)
- 1 -2 teaspoon cilantro (to taste)
- 1⁄4 teaspoon sea salt (optional, to taste)
- 1⁄4 teaspoon ground black pepper (optional, to taste)
Directions
- Heat vegetable oil in large skillet. Set aside chow mein noodles and 1 Tbsp of parmesan cheese.
- Sautée zucchini and squash until tender and slightly browned-up (zukes and squash will render down so don't worry if the pile seems to get smaller during cooking process); Add tomatoes and continue to sautée together until skins on tomatoes begin to wrinkle a bit.
- Mix in cilantro, bbq seasoning, garlic and onion powder, soy sauce, salt, and black pepper until well blended.
- Put vegetable mixture in to large salad bowl; mix in chow mein noodles until everything is well-coated. Sprinkle remaining parmesan cheese over dish when ready to serve.
