Summer Vegetable and Chicken Dinner

  1. season chicken with salt, pepper and paprika. in large deep frying pan heat oil over medium heat. add chicken and cook turning once browned well.
  2. pour in chicken broth to pan. cover pan and simmer 20 minutes.
  3. add vegetable and basil to pan. cover cook 3-5 minutes.
  4. season with salt and pepper if desired.
  5. transfer chicken to a platter arrange vegies around it and sprinkle with parmesan cheese.
  6. if you want you could thicken the dripping and serve along side.
  7. great dish to serve along side baked potatoes or a cool leaf salad.
