Summer Sweet Spring Salad.

Ingredients

  • 2  cups baby arugula or 2  cups  Baby Spinach
  • 12-1  cup grape tomatoes (approx)
  • 12 cup strawberry, chopped
  • 14 cup blueberries
  • 14 cup kiwi, chopped
  • 12 cup alfalfa sprout (or clover sprouts)
  • 1  small apple, chopped
  • 14 cup  almonds (approx)
  • 14 cup  chia seeds, to sprinkle on top
  • 14 cup  goat cheese (low fat) or 14 cup feta (low fat) or 14 cup blue cheese (low fat)
  • 3  tablespoons  raspberry vinaigrette dressing

Directions

  1. Combine the above ingredients into a large Tupperware bowl. Sprinkle about a quarter cup of feta or blue cheese crumbles. Sprinkle on the chia seeds. Top with a raspberry vinaigrette dressing. Top Tupperware bowl and shake to Mix well. *For variety, you can try this salad with poppyseed or citrus dressing. Also, for more citrus flavor, substitute mandarin oranges for the kiwi fruit.
