Summer Salad With Chicken and Citrus

This is a beautiful salad suitable for a light dinner. I would feel very comfortable serving this to guests. Show more

Ingredients

  • 4  cups  spinach leaves
  • 4  cups  mixed salad greens
  • 1 (15 ounce) can mandarin oranges
  • 8  ounces sugar snap peas, halved
  • 2 -3  cups  cooked chicken, cut into 2 ",cubes
  • 12 cup pecan halves, toasted
  •  raspberry vinaigrette dressing, to taste

Directions

  1. Toss all ingredients in large bowl.
  2. Spoon onto 4 serving plates.
  3. Great served with a raspberry vinaigrette.
