Summer Minestrone

Ingredients
- 4 cups vegetable broth
- 2 cups water
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (14 ounce) can stewed tomatoes
- 2 cups cubed potatoes
- 2 cups sliced carrots
- 1 cup green beans
- 1 cup sliced zucchini
- 1 cup sliced cabbage
- 1 cup sliced carrot
- 1 cup chopped onion
- 1⁄2 cup sliced celery
- 3 -4 garlic cloves, minced
- 2 teaspoons dried Italian seasoning
- 1 -2 cup cooked pasta
- salt and pepper
- 2 tablespoons grated parmesan cheese
Directions
- Combine all ingredient except pasta, salt, pepper and Parmesan in slow cooker. Cover and cook on low 6-8 hours, adding pasta during last 20 minutes.
- Served topped with cheese.
