Summer Meatloaf

Ingredients
- 1⁄2 cup chopped onion
- 1⁄2 cup shredded carrot
- 1⁄4 cup chopped green pepper
- 2 eggs, sightly beaten
- 1 1⁄2 cups soft breadcrumbs
- 1 cup cottage cheese, drained
- 1 teaspoon salt
- 1 teaspoon poultry seasoning
- 2 lbs ground beef
- 3⁄4 cup catsup
- 1⁄3 cup brown sugar
- 1 tablespoon dry mustard
Directions
- In a small saucepan cook onion, carrot and green pepper in a small amount of boiling water 5 minutes or until tender.
- Drain.
- Combine with eggs, bread crumbs, cottage cheese, salt and poultry seasoning.
- Add beef and mix well.
- Pat into a 9 x 5 loaf pan.
- Bake uncovered in 350 oven for 1 1/2 hours.
- Pour off excess liquid.
- In a saucepan combine catsup, mustard and brown sugar.
- Heat through.
- Serve meatloaf with catsup topping.
