Summer Mango and Chicken Salad

  1. Cook the chicken breast over a barbq and leave to rest.
  2. Boil some water and soften the noodles and leave to cool.
  3. In a large bowl put in the chopped cilantro, sliced scalliions, bean sprouts, bell pepper.
  4. Chop the noodles when cooled and add to bowl.
  5. Shred the chicken and add to salad.
  6. Dice the mango.
  7. Season and sprinkle with lime juice and some chilli.
