Summer Mango and Chicken Salad

Ingredients
- 2 large ripe mangoes
- 2 chicken breasts (free range)
- 1 bunch cilantro
- 6 scallions
- 1 lime, juice of
- 250 g bean sprouts
- 1 green bell pepper
- 250 g fine vermicelli
- 1 small chili
Directions
- Cook the chicken breast over a barbq and leave to rest.
- Boil some water and soften the noodles and leave to cool.
- In a large bowl put in the chopped cilantro, sliced scalliions, bean sprouts, bell pepper.
- Chop the noodles when cooled and add to bowl.
- Shred the chicken and add to salad.
- Dice the mango.
- Season and sprinkle with lime juice and some chilli.
