Summer fruit on the BBQ

Great recipe for the BBQ or campfire coals. From The Vegetarian Grill.

Serves: 2

Ingredients

  • 4  plums, sliced thin
  • 2  nectarines, sliced thin
  • 1  cup raspberries (or blackberries or blueberries)
  • 14 cup  fruit  liqueur (Framboise, Chambord, Cointreau etc.)
  •  sugar

Directions

  1. Cut two squares of heavy foil (roughly 8x8).
  2. Divide the fruit between the 2 foil squares.
  3. Drizzle each with the liqueur evenly.
  4. Seal the foil packets tightly.
  5. Place on grill, turning once, for 15-20 minutes.
  6. Open carefully because steam will rise!
  7. Sprinkle with sugar to taste.
  8. Tastes wonderful over ice-cream and the flavors get stronger over time.
