Summer Fruit Cocktail

Yields: 5 pints

Directions

  1. Chop peaches and place in 2 T.
  2. of fruit fresh mixed with 4 cups water (I would toss in the pears also).
  3. Combine water, sugar and honey in a large stainless enamel saucepan.
  4. Bring to a boil.
  5. Drain prepared fruit and add to syrup.
  6. Return to a boil and boil gently for 5 min.
  7. Add cherries.
  8. Place 1 sprig of mint in each hot jar.
  9. Ladle in fruit and syrup leaving 1/2 inch head space.
  10. Process in a boiling water bath for 20 minutes-at altitudes up to 1000 feet sea level.
