Summer Cucumber Salad

This is a quick, easy and fresh way to update the normal salad routine. I was looking for something different to serve at my graduation party. Everyone loved it. If you are a cheese lover you can always top with feta or cheddar when you add the dressing. It will seem like there is a lot of cucumbers but remember it is a cucumber salad. Also when choosing strawberries choose ones that are not too ripe that they are mushy.

• Serves: 8-10
• Yields: 1/2 cup

Ingredients

• 4  English cucumbers, thinly sliced
• 1  orange bell pepper, cleaned and cut into bite size cubes
• 1  yellow bell pepper, cleaned and cut into bite size cubes
• 1  red bell pepper, cleaned and cut into bite size cubes
• 2  celery ribs, very thinly sliced
• 2  lbs strawberries, thinly sliced
•  kraft  balsamic vinaigrette

• Optional

•  feta or  cheddar cheese

Directions

1. Mix all ingredients with your fingers.
2. Add Balsamic Vinaigrette just before serving.
3. Serve with a slotted spoon.
