Summer Chicken & Hoseradish Salad

Ingredients
- 2 slices bacon
- 2 cups cooked chicken, chopped
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1⁄2 cup corn
- 2 large green onions, chopped
- 1⁄4 cup raisins, chopped
- cilantro
- salt
- pepper
- 3⁄4 cup mayonnaise
- 2 tablespoons horseradish sauce
Directions
- Cook bacon until crispy, drain on paper towel and allow to cool. Chop into small bits and set aside.
- In a large bowl combine the next five ingredients. Add cilantro, salt, and pepper to taste,.
- Fold mayo and horseradish sauce into the chicken mixture. Then add the reserved bacon and stir to combine.
- Chill at least one hour before serving.
