Sugar-Free Oat Meal Spice Muffins

Ingredients
- 1 cup cream
- 1 cup quick oats
- 1 egg
- 1⁄3 cup butter
- 1 cup flour
- 1⁄4 cup coconut sugar crystals or 1⁄4 cup honey
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1⁄2 teaspoon vanilla extract
- 1 apple
Directions
- Mix together Cream and oats. Set this bowl aside.
- Preheat oven to 375 and prep your muffin tin.
- mix egg and butter together (gently).
- In a mixing bowl, sift together the flour, coconut sugar, baking powder, cinnamon and nutmeg.
- add the egg and butter mixture to the mixing bowl and gently stir.
- cut apple into chunks.
- Put apple chunks in mixing bowl.
- Add the contents of the first bowl (half at a time) and mix. add vanilla. DO NOT OVER MIX!
- bake for 25-30 minutes or until a toothpick comes out clean.
