Succotash

  1. Cook the lima beans and corn according to package directions; drain and combine in a large bowl.
  2. In a large, deep frying pan, melt butter.
  3. Saute the onions until tender.
  4. Stir in cooked vegetables and sugar.
  5. Add the light cream; simmer 5 minutes.
  6. Add the tomatoes and scallions.
  7. Season to taste with salt and pepper.
  8. Pour the cooked mixture into a serving bowl.
  9. Garnish with chopped chives.
  10. Serve warm.
