Ingredients
- 8 ounces cream cheese, softened
- 12 ounces Cool Whip
- 1 teaspoon coconut extract
- 7 ounces coconut flakes
- 8 inches prepared graham cracker crusts
Directions
- In a mixing bowl, beat cream cheese and cool whip until thoroughly combined. Add coconut extract and coconut. Mound into pie shell and refrigerate for at least 4 hours.
- For a decorative touch, sprinkle with toasted coconut.
- For a more tropical taste, put a layer of lemon or lime curd in the crust before adding the coconut mixture.
